Get to Know Your Waffle Iron
If you have a bad waffle maker, chances are, you’re going to have bad waffles, so the first step to wonderful waffles is getting a good waffle iron—and knowing how to use it! First, be sure to read the directions on your waffle maker. Newer models tend to not require you to coat the surface, but with older waffle maker models—or with models that require it—be sure to coat your iron with melted butter or vegetable oil for waffles that can be removed smoothly.
Make Better Batter
The second step to tastier waffles is to make sure you’re starting with quality batter. We think buttermilk is best, but if you don’t have any on hand you can always create your own similar flavor by adding a tablespoon of lemon or vinegar to a cup of milk, then letting it stand for 15 minutes.
For light, fluffy waffles, separate your egg whites and whip them until they're stiff before gently folding them into your batter. And while waffles and pancakes have similar ingredients, adding those whipped egg whites or an extra kick of sweetness with vanilla extract or amaretto takes waffles from crispy pancakes to a category all their own.
