If you’ve had your fill of pumpkin — a perfectly understandable possibility because it’s high in fiber and therefore slows digestion, keeping you feeling full — you can freeze it for up to three months. We recommend freezing it in ice cube trays so you can thaw only what you need for the next holiday or craving. Or, to save space, store it in a freezer bag and lay them on a tray until frozen to get them nice and flat.
Pumpkin purée will also last for around 4-6 days in the fridge, so don’t be quick to discard even a tiny amount at the bottom of your can. There are plenty of ways to use even the smallest amount in exciting dishes you can make quickly that will give you even more reasons to love fall.
