Ultimate Thanksgiving Sandwich

Whether you’re using leftover turkey or store-bought, this Thanksgiving sandwich recipe makes for the ultimate fall feast. Featuring Thanksgiving favorites like stuffing, potatoes, and cranberry sauce sandwiched in-between two pieces of sliced brioche, you’ll want to enjoy this meal all year long.

Ingredients:

  • 3 cups leftover roasted turkey, shredded
  • OR If not using leftover turkey:
  • 2 lbs. Giant Eagle turkey thighs
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • 1 box Stove Top stuffing mix for chicken
  • 1 box Betty Crocker™ au gratin potatoes
  • 6 Tbsp. butter, divided
  • ½ cup milk
  • 1 cup Heinz gravy homestyle classic chicken gravy
  • 1 cup Giant Eagle chicken broth aseptic
  • 8 slices St. Pierre brioche loaf
  • 1 cup Ocean Spray® whole berry cranberry sauce

Directions:

  Prep Time: 5 min. • Cook Time: 45 min.
(1 hr., 45 min. if not using leftover turkey)

If you are not using leftover turkey, preheat oven to 375°F. Season turkey thighs with salt and pepper. Place on a rack over a roasting pan and roast about 1 hour.* Let cool, then shred the meat and discard skin and bones.

While the turkey is roasting, prepare stuffing and au gratin potatoes using water, butter, and milk according to package directions.

Combine the shredded turkey with gravy and chicken broth in a medium pot. Bring to a boil then reduce the heat and simmer 20 minutes or until the sauce is thickened and the meat is tender.

Toast the brioche slices, then build the sandwiches starting with the cranberry sauce, gratin potatoes, stuffing, turkey and gravy and finish with the second slice of toasted brioche bread.

*For food safety, cook turkey to an internal temperature of 165°F.
