If you are not using leftover turkey, preheat oven to 375°F. Season turkey thighs with salt and pepper. Place on a rack over a roasting pan and roast about 1 hour.* Let cool, then shred the meat and discard skin and bones.
While the turkey is roasting, prepare stuffing and au gratin potatoes using water, butter, and milk according to package directions.
Combine the shredded turkey with gravy and chicken broth in a medium pot. Bring to a boil then reduce the heat and simmer 20 minutes or until the sauce is thickened and the meat is tender.
Toast the brioche slices, then build the sandwiches starting with the cranberry sauce, gratin potatoes, stuffing, turkey and gravy and finish with the second slice of toasted brioche bread.
*For food safety, cook turkey to an internal temperature of 165°F.
