Preheat the grill to medium-high. Peel and dice mango into ¼-inch pieces. Peel the onion and cut into ¼-inch pieces. Remove seeds from jalapeño and cut into ¼-inch dice. Roughly chop the cilantro and juice the lime.
In a mixing bowl, combine the mango, onion, jalapeño, lime juice, ½ tablespoon of olive oil, ½ teaspoon of salt, and ¼ teaspoon of pepper. Mix well until everything is combined.
Season salmon with a pinch of salt and pepper and 1 tablespoon of olive oil. Place on preheated grill and cook for 4 minutes on each side.*
Serve salmon with a large heaping spoonful of the mango salsa and enjoy!
*For food safety, cook salmon to an internal temperature of 145°F.
