Mama Beardsley's Cauliflower Salad

Make a cauliflower salad just like mama used to make with this easy, low-carb recipe. In just 10 minutes, this cauliflower, pea and dill dish can be added to any lunch or dinner for that heaping helping of veggies you’ve been needing.


  • 1 head cauliflower
  • 1 bunch Nature's Basket organic baby dill
  • 24 oz. Giant Eagle frozen green peas, thawed
  • 1 cup Giant Eagle mayo
  • ¼ cup Marukan® rice vinegar
  • ½ tsp. kosher salt

Cut the cauliflower into florets then thinly slice. Pick and chop the dill.

Toss the cauliflower, peas, mayo, vinegar, chopped dill and salt to combine.
