Cut the cauliflower into florets. Place the cauliflower in large bowl and toss with 2 tablespoons olive oil, 1 teaspoon kosher salt, 1 tablespoon garam masala and 1 tablespoon turmeric.
Transfer the cauliflower to the basket of an air fryer and set for 8 minutes at 400°F.
While the cauliflower is cooking, reserve a few leaves of mint for garnish and chop the remainder. Pick the dill and set aside for garnish. Stir to combine the buttermilk, tahini and chopped mint.
Once the cauliflower is done, transfer to a platter and drizzle with the buttermilk sauce. Garnish with the reserved mint, dill, and sesame seeds.
